it’s been awhile since i’ve posted a recipe that didn’t have to do with dessert… i mean hey, can ya blame a girl?! #sweettoothlikeacrazyperson
so i bring you an easy pita, packed with protein and goodness, that you can whip up for lunch or dinner or breakfast! i mayyyy have eaten it for breakfast and dinner yesterday.
it’s just so gosh darn good! and easy peasy to toss together!
Protein Packed Pita
1/4 cup black bean salsa
1/4 cup shredded cheese
1 cup egg whites
big ‘ol handful of spinach
step 1: saute up your spinach, scramble those eggs and top with cheese!
step 2: cut pita in half to create 2 open pitas
step 3: combine sauteed spinach and scrambled eggs, add in black bean salsa
step 4: mix mix mix then stuff away into those 2 pitas! add more cheese, if you’re feelin’ extra cheesey!
this would be REALLY good with avocado too, but i didn’t have any. next time for sure!!
