for me to say that i’m prettttty 110% positive I have officially created the most perfect gluten-free chocolate chip cookies EVER is a BIG statement.
i mean… you’ve come across a lot of people saying “oh but these are seriously the BEST cookies EVER!”
then you eat it.. and they crumble apart
or are too mushy.
or too chewy.
making gluten-free cookies is a tricky tricky business ya’ll.
and i’ve made a fair share of chocolate chip cookies in muh life.
i promise you… these are my best yet.
and i’m like ooooober excited to bring you this incredibly EASY recipe that you can realistically make ANY ‘flavor’ cookie you want with them because the base is just that versatile and perfect as is.
i mean you can add mint chips instead of chocolate chips.
or crushed up candy canes for a holiday themed one.
even marshmallows instead!
let’s just say.. when a recipe turns out good, my husband takes a bite and does a little “toot toot” like he’s the conductor on a train.
and these cookies got like 5 “toot toots”.

The Best Gluten-Free Chocolate Chip Cookies
I mean… look at those?!
they’re thick, dense, chocolatey…
jam packed with flavor…
OK OK! I’M BACK.
was just literally having a flashback to
this morning, i mean yesterday when i had a couple.
what do you need for these bad boys?!?!
1 cup All Purpose Gluten-Free Flour
3/4 cup Coconut Flour
1 stick (8 tbsp) grass-fed butter (any butter shall do)
1 1/4 cup Organic Light Brown Sugar
3 tbsp Egg Whites
1 egg yolk
1 tsp Baking Soda
1 tsp Salt
4 tbsp Carob Chips (OBSESSED with these lately!! adios regular chocolate chips)
2 tbsp Peanut Butter Chips (optional – i tossed a few in for some peanut buttah flavor!)
preheat oven to 350 degrees F.
step 1: combine your flours, baking soda and salt and mix up.
step 2: melt your butter (in microwave for about 35-40 seconds) then toss in your brown sugar.
step 3: with a hand blender (clearly i LOVE mine and use it a lot – seriously GRAB THIS ONE! it’s a game changer) mix thoroughly then add your egg whites and 1 egg yolk.
step 4: pour your wet mixture into the dry mixture bowl and combine until you create your cookie dough.
toss in those chocolate chips
bake in oven for 13-15 minutes, or until they start to golden.
eat right away, allow to cool for a few minutes on a cookie rack
is not to eat 3 in one setting…
or them all.
i may have had 4 immediately out of the oven and while taking these photos.
because i gotta make sure they’re PERFECT for you guys.. duh!
