seriously. right now. in muh belly. i need taco bell.
because well, i love tacos.
well lesbehonest, i love anything that resembles or has to do with mexican food.
i could live off of mexican food.
ok you get the point!
so guess what i did?! i brought taco bell to my kitchen!
or whipped up a “moc” taco bell taco-bowl is pretty much what went down
and can i say i didn’t swell up like a balloon after the heavenly taco bowl like i do after eating taco bell?!
and it was “husband approved”!
so i bring you a lean, mean, taco-bell-wanna-be..
with a SERIOUSLY delicious Avocado Dressing!
4oz ground chicken
1/4 cup shredded cheeseeeee
1 large flour tortilla
diced up cherry tomatoes
1/4 cup black beans
cumin, and any other spicey spices you like
for the avocado dressing:
1/8 cup greek yogurt
1/4 cup avocado
step 1: ground your chicken in the cumin and any other spices you want.
step 2: while that’s been cooked, heat the oven to low broil and stick a flour tortilla inside an oven-safe bowl. this is how you make the SHELL for your taco salad! genius right?!
pop it in the oven while you’re doing the rest of the steps..
step 2: for the avocado dressing: in a bowl, combine greek yogurt, avocado, lemon juice and cilantro. Stick in a blender and blend away!! then add in your lime juice, enough to make it a little more watery so it spreads and blends better.
step 4: drain your black beans, dice up tomatoes, and separate everything into little bowls so you can then make your layers when ready!
step 6: fill it with the lettuce, then chicken, tomatoes, black beans and then pour your avocado dressing over top, add a little more cilantro then top with cheese!!!
INHALE! either straight outta the bowl or lay on a plate. just be ready for it to fall apart, but it kind of then turns into nachos, which is always fun!
