with Valentines Day right around the corner, you can’t walk into a store without their being strawberries, chocolate, more chocolate, chocolate dipped strawberries, flowers…
and more chocolate.
you get the point!
so i figured i’d provide a fun waist-line-friendly and Valentines Day “Pretty” treat for you to whip up and share with your loved ones!!
i mean what says I love you more than giving them a dessert that’s not only filled with healthy fats, but insanely delicious AND doesn’t derail them from their Mission Get That Summer Body?!
so let’s get straight to the point, shall we?!
3 Layer (well 4!) Chocolate Strawberry “Shortcake” Bites
Vanilla layer (bottom)
30 grams of Coconut Butter, melted
1 tsp Vanilla Extract
1/4 cup Greek Yogurt
1/4 cup Diced Strawberries
Step 1: in a small bowl, stir together your softened (almost melted) coconut butter and vanilla. take out a mini muffin tin and take a dollop of the vanilla base and pour/press down into the bottom of the tin, then pop in the freezer.
Step 2: while the bottom layer is freezing, let’s begin our second layer! in a microwave-safe bowl, pour in your chocolate chips and your coconut butter, put in the microwave for 11 second increments, stirring in between, for about 3 times. check on your tins in the freezer and if they’re hard, pour this chocolate layer over top of them and spread smooth then stick back in the freezer.
Step 3: easiest step! take out your tin from the freezer, double check the bottom 2 layers are hard then take a dollop of the greek yogurt and place/smooth it over top of your vanilla and chocolate layers, then topping off with your diced strawberries!
stick back in the freezer for about 15 minutes, then enjoy!!!
I made this as a small-batch as i turned it into a little display for my husband! you could easily just multiply the amounts to whatever amount of the batch you want to create. easy peasy!!
any mold would work and be fun, especially if you have a heart mold like this one: Heart Mold Pan
