Protein Blueberry Bites

you know what’s wonderful? when whip up a recipe that is less than 5 ingredients. because sometimes we just either need a quick sweet-treat to curb that desire, or we need to make something that can be easily enjoyed as much as it was to make it!
another one of my favorite things besides recipes that are dowsed in chocolate and peanut butter, are treats that are not only delicious but good for you. if i can hit two birds with one stone, i’ll take it!
you know when you’re on the go, packing up snacks for a road trip, or just need a fast bite and you dig through your pantry and fridge looking for something that fits the bill? well with what i’m about to bring you… i have solved your searching problem! because with these bad boys, you can keep in a container in the freezer, and pop them out or in your mouth whenever you desire!!
oh.. and… they’re packed with antioxidants and protein! sure to keep you satiated on that road trip or fulfilled for a little dessert after lunch.

i mean… if you don’t make these.. then you’re missing out! everyone’s got a few minutes in their day to save some money and make goodies at home vs. going out and buying a packaged treat. you’re welcome!!
so without further adue… i bring you…
Protein Blueberry Bites
whatchat need:
¼ cup blueberries (frozen or fresh)
½ cup garbanzo beans
¼ cup oat flour (ground oats)
½ scoop vanilla slap protein powder (code: taylor for 10% off)
yep. that’s it. 4 simple ingredients you most likely already have in your pantry or fridge!
let’s get down to business, shall we?!
step 1: make sure your oats are blended into a flour, by simply tossing oatmeal into a magic bullet and blend away!
step 2: rise and drain your garbanzo beans, scoop out ½ cup and toss into a food processor.
easy enough, ‘eh?!
step 3: add in the blueberries to the food processor and blend some more! taking a spatula to get down the sides when needed.
step 4: get out a bowl, scoop in your blueberry mix.
toss in the oat flour and begin to mush it all up. it’ll be thick, so use a spatula or back of a spoon to really press it all together and make sure it’s thoroughly mixed.
add in your protein powder
try not to lick the spoon.. yet…
i mean, look at that texture, right?!
then get out a plate, and begin to form your blueberry bites
step 5: pop in the freezer or fridge then when they’re firm you can enjoy right away, or toss them into a tupperware and store in the freezer until you’re ready to eat!
these would be great to take to a cookout or a family event, as they’re so easy to make and super tasty of course! you would just need to double or triple the ingredient serving.
