mini-pigs (fun fact i used to have a mini-potbellied pig!), mini-carrots, mini-cars, i mean anything tiny-tiny that usually is BIG makes me smile!

i make a batch, normal size, every.single.sunday.

forreals. and i’ve had lots of comments and emails that a lot of YOU make a batch every single sunday to enjoy throughout the week.

because the macros, and flavaa are just that damn good!

today i bring you, with a happy mini-loving heart..

Mini Protein Cheesecakes

ok ok, i swear i won’t use the word mini anymore.

so here we have it peeps:

whatcha need:

Mini Protein Cheesecake1 slab ‘o fat-free cream cheese (8oz)
1 whole organic egg
2 tbsp organic greek yogurt
1/2 scoop Vanilla Slap Protein Powder (use code TAYLOR for 10% off)
a pack of 6 mini (ok i HAD to write it here, gimme a break) graham cracker pie crusts

whatcha need for the optional chocolate topping:
2 tbsp fat-free whip cream
1/2 tbsp cacao powder
sprinkle of cacao nibs

*put oven on 325*

step 1: soften up your slab ‘o cream cheese in microwave for 30 seconds, or just leave it out on the counter for about 20 minutes to get to room tempature.  add in 2 tbsp greek yogurt, 1 whole egg and blend with a hand blender!

step 2: add in your 1/2 scoop of slap-tastic protein powder. blend again!

step 3: evenly scoop cream cheese mixture and plop right onto your little itty bitty pie crusts! how cuteeeeeeee?!    to make sure they’re even, do one scoop each at a time not a bunch at once in one that way you don’t run out.

step 4: make sure to place your pie crusts on a baking sheet then stick in the oven at the 325 temperature for 25 minutes.  THEN bring temperature down to 225 and bake for another 15-20 minutes or until tops are slightlyyyy golden.

step 5: stick in the fridge for at least 4-5 hours (overnight preferably)

for the topping, which is totally optional, because they’re delicious plain, in a small bowl with a spatula, simply mix together whip cream and cacao powder then spread over pie when ready to eat!  maybe even sprinkle with cacao nibs and enjoy!
