how can you make meatloaf LOOK photo-worthy?
because it always ends up looking like a loaf of “stuff”.
and the word loaf, is just weird and doesn’t sound appetizing.
but i SWEAR this super lean meatloaf tastes SO much better than it looks!!
and uses basic ingredients that you probably already have in your fridge, ready to be used up!
1lb ground turkey
1 whole egg
1/4 cup egg whites
1/2 cup oatmeal
1/4 cup pizza sauce (or marinara or ketchup)
1 pepper (chopped)
handful of spinach
step 1: preheat oven to 375 degrees
step 2: make sure the ground turkey is raw, or you’ll overbake it (been there done that) and it’ll be super dry. so in a big bowl, combine ALL your ingredients.
step 3: ready to get your hands dirty?! dig in and start mashing it all up until all the ingredients are fully combined.
step 4: spray a bread pan – the deep “loaf” looking ones OR if you want to get all cutesie like i did you can disperse the mixture into mini-loaf pans AND muffin tins!! the muffin tin ones are PERFECT for people that eat on the go, or for kids because they’re little and fun looking. yeah, i said meatloaf was fun looking. whateva.
step 5: stick those loaves (loafs? loaves? which one is it?) in the oven and bake for 30-35 minutes or until bubbly and clearly cooked through.
step 6: take out, serve with some veggies on the side or add a little sprinkle of cheese for added goodness!

seriously, how much leaner can you get?! protein packed! Personally, I would probably eat 2 servings (4 muffins or 2 loaves) so really bring on that protein!
