I wish computer screens had smell-o-vision.

Because ya’ll…..

What I’m about to bring into yo life smells like heaven shot rays of Fall Scent throughout your kitchen, home and straight through to your taste buds.

That was a bit extreme and super exaggerated.. butttt… really though.  while I was making these I wanted to capture the smell that came from the oven while they were baking, and bottle it up!!

Because who doesn’t love the smell of pumpkin as the leaves begin to change, and the weather gets a little cooler?

Right about now, everyone’s Instagram feeds and facebooks are flooded with pumpkin this, pumpkin spice latte that and omg PUMPKIN PEANUT BUTTER.

Errrrrythang.

And I’m right there with you peeps.

Pumpkin pie and taylor goes together like pb & j.

as with most desserts, and I say it all the time, they don’t exactly go with our waist line we like to keep sexy, trim and healthy!

So in the spirit of all things Pumpkin, I bring you a new recipe to add into your long list of fall-inspired deliciousness!

But these aren’t your ordinary fluffy muffins…

They’re dense..

They’re ridiculously moist (yes I hate that word too)..

The texture is perfectly “crisp” on the outside and literally Pumpkin Pie Worthy gooey on the inside.

They smell like ugg boots & sweater-weather.. you know what I mean

AND they’re LOVING on that waist line! No stretchy pants needed for these sweet-tooth fixin’ goods!

Oh and the macros? Wait until you get to that part..

Let’s just say, these may be your new family (and husband!) friendly swap out for pumpkin pie this season.

So let’s get to it shall we?

Pumpkin Pie Muffins

Whatcha need:

1 can 100% Pure Pumpkin
2 tbsp Extra Virgin Coconut Oil
2 Eggs
¾ cup Whole Wheat Flour
pumpkin pie spice (or cinnamon and nutmeg)
1 tsp baking powder

Step 1: preheat oven to 350 degrees.  Whip out your mixing bowl and toss in your pumpkin, oil, baking powder, spices and begin to mix with hand mixer (this is the one i have and LOVE it!).

Step 2: slowly add in your whole wheat flour, followed by your eggs.  Blend until creamy and smooth!

Try not to lick the bowl, just yet.

Step 3: Spray a muffin tin with Coconut Oil cooking spray – or line them with cupcake liners (how cute are these?!) and pour batter into each until about ¾ full.

Step 4: Pop tray in preheated oven for about 12-15 minutes, until you can see the centers have risen and the edges are nice and golden.

Remove tray, let cool for a few minutes, then enjoy!

They’re ridiculously delicious plain, you really don’t need to add anything too them, because just like pumpkin pie they’re already creamy textured like a pumpkin pie!

But if you want to dress them up, I’d say go with a dollop of ice cream, whipped cream or even maybe some peanut butter (helllllo JIF crazy flavors like this Pumpkin Spice one!)
