Gluten-Free Peanut Butter Fudge Brownies

last week i was on a chocolate and peppermint combo roll..
this week, i’m on it’s counter part, the chocolate and PEANUT BUTTER combo!!
i really cannot decide which i like better?! chocolate + peppermint or chocolate + peanut butter.
i took a ‘poll’ on insta and facebook and it seems that the chocolate + PB wins!
which makes me think… what would something taste like that has a combo of all 3?!
……you know i’m going to try it!
but until then… i bring all you chocolate + PB lovers out there something easy and GUILT-FREE to whip up for yourself and enjoy the delicious combo!
Gluten Free Peanut Butter Fudge Brownies
and they’re so gosh darn simple to make and 100% fail-proof!!
let’s get down to business shall we?!
whatcha need:
1/2 Cup Oat Flour (oats that are ground down to flour)
1/2 Cup Carob Powder (or regular cacao powder)
1/4 Cup Organic Coconut Sugar
1tsp baking powder
1tsp salt
1/2 Cup Almond Milk
3 tbsp Egg Whites
5 tbsp Peanut Butter, creamy
1/4 cup Carob Chips (or chocolate chips)
preheat oven to 350 degrees F.
step 1: in a food processor toss in your oats and turn into flour, if you’ve done this already you can just mix this whole recipe in a large mixing bowl.
step 2: add in your carob powder, coconut sugar, baking powder, and salt.
step 3: pour in your wet ingredients (except peanut butter) and blend thoroughly.
step 4: spray a 9×9 (or any size) pan and pour that batter right on in!
step 5: sprinkle your chocolate chips over your batter
melt your PB in a small bowl just to soften up a bit
then take dollops of the PB and plop it right into your batter, no rhyme or reason.
step 6: take a fork or knife and give that PB a little swirl through!
stick in the oven for 15-18 minutes, or until edges begin to crisp up, take out, let cool
then devour!
i mean… enjoy and savor every single guilt-free and bikini-bod-approved bite!!
