Gluten-Free Chocolate Chip Pumpkin Cookies

there’s no such thing as too much chocolate

just like there’s no such thing as too much pumpkin during the fall season!

the one thing i love about baking with pumpkin is not only it’s low-carb aspect, but the texture of the goodies it always produces is SPOT on.

everything i’ve incorporated pumpkin into always turns out soft, dense, moist (i hate that word too) and just overall packed with a delicious flavor!

plus, when they’re in the oven your entire kitchen smells like pumpkin pie! yes please!

and like all my recipes i create, my goal is to make the steps as easy as possible, because no one likes to look at a recipe that has like 15 steps and 20 ingredients, half of which are definitely not in your pantry.

oh and you know what else? most recipes create about 24 cookies, what if i don’t want 2 dozen cookies?!

i’ve got yo back!  this recipe only creates 8, yup 8 cookies! WIN!

so you ready for this chocolate-y, pumpkin-y goodness?!

Chocolate Chip Pumpkin Cookies

Gluten-Free, Low-Carb Chocolate Chip Pumpkin Cookies

whatcha need:

1 Cup Oats
1/2 Cup Oat Flour
1/8 Cup Brown Sugar (or coconut sugar if you’d like!)
1/4 tsp Baking Soda
1/4 tsp Cinnamon
2 tbsp Unsweetened Carob Chocolate Chips
1/4 Cup Pumpkin Puree (canned pumpkin)
2 tbsp Almond Milk
2 tbsp Almond Butter (any nut butter will work, I bet this flavor would be perfect!)

Preheat oven to 350 degrees F.

Step 1: In a bowl, combine all your dry ingredients.

then in another bowl, combine your wet ingredients and mix thoroughly.  Microwave a few seconds if you need your  nut butter to soften up a bit.

Step 2: Pour your wet ingredients into the dry ingredient bowl and mix! easy enough right?!  Toss in those chocolate chips.

Step 3: On a parchment lined paper, scoop out and press 8 cookie dough balls onto the cookie sheet and press into a cookie shape.

Step 4: Stick in oven for about 10 minutes.  Remove and let cool for a few minutes then enjoy!!
