you buy them. set them in a basket on your counter or in your fridge, feeling all healthy doing so, knowing one day you’ll get in those healthy fats and feel even better about yourself!
…then 3 days go by.
you look over at them, still thinking of something to create with them, grab one and BAM. it’s squishy.
i swear they’re “perfect” for like 2 hours only one day, then they just decide to go downhill from there! amen?!
so you usually toss them.
NOT ANYMORE PEEPS! because i got something that’ll not only allow you to use up those sad, sad avocados, but that’ll make that sweet tooth happy! kid & husband approved.
did i mention they’re gluten and dairy-free?
and healthy? 100% heatlhy?!
not the kind of healthy brownie recipes you find, where the sugar has been replaced with sweeteners or half of the butter replaced with canola oil. seriously? should fake un-natural sweeteners be healthier than usual sugar? well, i get stevia is still natural, but i really don’t think those chemically produced sweeteners are good for you. but i digress… rant over. because my solution?! i always try to go for the other kind of sweeteners in my baked goodies – natural sweeteners to be exact.
coconut sugar! which i’ve used in a few other recipes, but in these sexy things i’m about to introduce to you, you’ll never know it’s not filled with white, fake, sugars. and the texture? AHmazing.
how are they healthy?? here’s the break down ya’ll..
avocado instead of butter (which i swear you cannot taste one bit of)
no grains (helloooo gluten free, the natural way!)
coconut sugar instead of white
protein powder (keeping you full one scoop at a time!)
dark chocolate (hi antioxidants and healthy skin!)
and the rest is the classic baked good accessories…
the texture of these brownie bites, are well spot on. you’ll have to tell those little debbies brownie bites that come in those ridiculous 100 calorie bags, ADIOS!
step 1: preheat oven to 350F degrees then whip out your hand mixer or food processor (i use this one and love it). mix together your avocado flesh, coconut sugar and egg until smooth.
step 2: mix in the cocoa powder, protein powder and baking soda.
step 3: blend/process until creamy, then grab a spatula to scrape down the edges and make sure it’s all blended nicely!
step 4: get out a mini (or regular size) muffin tin and begin to evenly disperse the chocolate-y goodness throughout, filling each about half full.
step 5: bake for about 10 minutes, or until you see centers begin to fully rise.
allow to cool before devouring, no one needs a burnt tongue. it’s a struggle i know, but trust me, these babies are even better after they’ve had a bit of time to settle. i actually like them best after they’ve been chilled in the refrigerator for awhile!
next time, i think i may add some PB2 or maybe even peppermint extract?!
