all this cold weather all of a sudden has me missing summer already!

i am so not ready for this 30 degree and below stuff1 unless it SNOWS, i’d rather it just be 75 all year ’round!

who’s with me?!

so let’s take it back to summer memories to help warm up our souls at least!

when i think of summer, one of my favorite things to do is go camping.

and when i think of camping i think of..

S’MORES!

because, anything that has to do with ‘gimme some MORE’ and it being acceptable is a win in my book!

just the feeling of sitting around a campfire, surrounded by the ones you love, stick in hand with a marshmallow beginning to glow at the end that lays right within the campfire, makes my heart happy!

either you’re a burnt marshmallow lover or just slightly warmed, right? me, i am a full on BURN marshmallow maker.

i’m that camper whose marshmallow is legit on fire and everyone is starting to give me that ‘are you going to eventually blow that thing out?’ look.

nope! crispppppy please! and nice and ooey gooey on the inside!

then to top it off by adding chocolate and an added crunch with the graham crackers..

it’s like a trio that was made in heaven and meant to be enjoyed YEAR ’round!

yep. you can have s’mores in the winter too.

oh and you don’t have to worry about your hair and clothes smelling like campfire days later, because i have a game-changer coming your way!

they have allllll the criteria of a regular camp-ground-worthy s’more.

the crunchiness from the graham crackers, the ooey gooiness from the marshmallow and the sweet sweet goodness of chocolate oozing o ut!

so are you ready?! are you ready for a smoke-free make-them-in-your-spongebob-pajamas-sans-campfire s’mores?!

let’s get to business, shall we?!

whatcha need:

2 full sheets of Low-Fat Graham Crackers
1 1/4 cup Coconut Flour
8 tbsp (1 stick) Grass Fed Butter
1/4 cup Light Brown Sugar
1/2 Cup Coconut Sugar
1 whole egg
2 tbsp calorie-Free Maple Syrup
6 tbsp Semi-Sweet Chocolate Chips
1/2 cup Marshmallow Fluff (naughty, naughty fluff… i love you so much though!!)

Preheat the oven to 340 Degrees F.

Step 1: turn the graham crackers into a fine powder by placing in a food processor and process until nice and crumby.  or stick them in a zip lock baggie and smash up.

Step 2: in a large mixing bowl, combine your graham cracker crumbs with the coconut flour.

Step 3: in a microwave safe bowl, microwave your butter for about 25-30 seconds to soften up, then add in your egg, syrup and sugars.  with a hand mixer blend thoroughly until nice and creamy.

Step 4: Pour your butter mixture into the dry mixture bowl and combine thoroughly.

Step 5: Spray a baking dish with coconut flour spray, then take HALF of the dough and pour it into the pan, taking the back of a spoon or spatula to make sure it’s spread evenly and smooth.

Step 6:Sprinkle your chocolate chips over the dough layer.

S'Mores Bars Step 7: Take your marshmallow fluff with a spatula and begin to smoothly spread over your chocolate chips.  it wont’ be pretty and perfect and some of your chips will pick up with the fluff but that’s ok.  just make sure to spread the fluff all over evenly.

Step 8: With your hands, take out the other half of the dough and form it into 2-3 ‘sheets’ to lay nicely over top of your dough, chocolate and fluff! like a little sheet over top.

Step 9: stick your dish into the oven and bake for 25-30 minutes or until the edges and center begin to golden slightly.

S'Mores BarsThey’re delicious right out of the oven (after cooled for a few minutes, because no one wants a burn tongue) but JUST as good cold the second time around! if there’s any left that is!
