cream cheese french toast

i woke up the other morning and did something CRAZY.
i didn’t make my usual every-day i-love-them-so-much waffles!
WHAT?! the horror!
sorry waffles. i do love you.
but i was craving something sweet and crunchy!
so HELLO french toast! with a twist, of course! gotta get snazzy sometimes and live on the edge, ya know?!
oh and the recipe i whipped up is egg-free. so there’s one “step” you don’t have to do – adios soggy bread!
and smothered in nut buttttahhhh
and cream cheese heaven.
side note: is it just me or does french toast just make your heart happy?
i mean look at that stack. crispy. warm. and it always reminds me of my childhood! not sure why because i LOVED pancakes and only pancakes growing up.
are you ready for the most DELICIOUS french toast stack you’ve ever had?!
Cream Cheese French Toast
whatcha need:
4 slices (or however many you want) of bread
1 tsp extra virgin coconut oil
1 tbsp almond butter
2 tsp cream cheese
blueberries
a heart filled with loveeeee. a necessary ingredient, of course!
step 1: whip out your go-to bread and 1 tsp coconut oil. slather both sides of all your bread then lay on heated pan (medium/low heat)
step 2: while they’re cooking – 2 minutes on one side then flip for 2 minutes on another* make your cream cheese frosting! in a microwave safe bowl combine 2 tsp cream cheese and 1 tbsp almond butter (any nut butter will do of course!!) and pop in microwave for about 20-25 seconds to soften it up.
step 3: it’ll turn out nice ‘n whippy!!! get your french toast off your pan and get ready to deck-out those coconut crispy breads!
step 4: spread the cream cheese frosting ontop of each french toast, top with whatever you want or nothing at all. my go-to for any breakfast is blueberries!!!
my trick for “syrup” is to microwave in a bowl with 2 tbsp water, any frozen fruit for about 3 minutes. it literally turns to warm syrup and if you put in some brown sugar it’ll crystallize it. YUM.
did you know blueberries are FILLED with awesome antioxidants?! try to get some into your system every single day! at least 1/2 cup will do the trick!
i may have these for breakfast and lunch again tomorrow. because there’s no such thing as too much nut butter, cream cheese or bread. amen?!
