Cookie Dough Stuffed Chocolate Balls

Two words that just belong together are cookie dough and then when followed with chocolate is a win in my book… who does not like dipping your finger right into a big batch of cookie dough when whipping up your favorite chocolate chip recipe?! We were always told growing up not to eat it because of the raw eggs… but I feel like that’s just a wives tale so as kids we wouldn’t get all hyped up on sugar pre-baked cookies!
I kid I kid… I know eating raw eggs can be risky business.
But that does not keep this little lady from crushing a batch of cookie dough, it just means I’ve had to recreate the dense, chocolate-y, creamy, melt-in-your-mouth, nastolgic mix so that no one gets hurt in the process!

So clearly I like to take a classic and incorporate it in any way to get my cookie dough fix!
Another one of my favorite things to whip up in the kitchen is treats that are easy to grab and can be enjoyed on the go and of course guilt-free and JAM PACKED with deliciousness!
That’s why anything that has to do with rolling up in a ball, popping in the refrigerator and allowing time to do it’s thang without having to do much work, but dig in when ready, is a PLUS!
Raw ‘baking’ is kind of like a crockpot, you set it and forget it!
What I’m about to bring you will blow your taste-bud’s FACES off..

Ready to get the how-to? Because as always these babies are about to be easy on that waist-line, gluten-free and packed with FLAVAH that you think you’re being naughty!
Cookie Dough Stuffed Chocolate Balls
Whatcha need:
1/3 cup Gorbanzo Beans (rinsed and drained)
½ scoop Slap Nutrition Peanut Butter Protein Powder (use code TAYLOR for 10% off)
2 tbsp Peanut Butter, creamy
¼ cup Almond Milk, unsweetened
¼ cup Sugar-Free Syrup
30 grams Cacao Chips
45 grams Cacao Chips
Step 1: in a food processor, blend your gorbanzo beans until creamy, then add in the peanut butter. Slowly pour in the almond milk and syrup
Step 2: with a spatula, scrape out the batter in place into a bowl, then fold in the protein powder followed by the 30 grams of carob chips
Step 3: here’s the fun part.. dig in!! scoop out 6 balls and begin to roll to form and then place each ball onto a plate.
Step 4: pop the plate of dough balls into the refrigerator and allow to set for about 30 minutes.
Step 5: in a microwave save bowl, pour in the 45 grams of carob chips and microwave in increments of 20 seconds until melted and smooth!
Step 6: take out the dough balls and drop each one individually into the melted chocolate (one at a time) and using a spoon roll around to cover in the chocolate.
Place back on plate and when all dough balls have been covered stick back in refrigerator for about 30 minutes again, or until chocolate hardens up!
Forewarning…. These 6 bite-sized, mouth-watering-worthy balls WILL go fast! So if you want to make more, simply double the measure of the ingredients!
Because there’s no such thing as too much chocolate or cookie dough in your life.. amen?!
