ok, now that i’ve totally gone the other direction of this recipe, let’s get back on track, shall we?!
i love sweet potatoes. i love coconut oil. i love fried food (yeah, we got that).
so can we make HEALTHY “deep fried” sweet potato fries?!
yep! and they will sure make your fried-lovin’ self happy and keep that waist line trim! win.
with that i bring you today’s soon-to-be-house-favorite recipe…
Coconut “Fried” Sweet Potato Fries
heavenly right? crunchy on the outside, gooey on the inside!
step 1: chop up those taters, whatever way you want. i did cubes just because i can fit more of them “comfortably” in the frying pan.
step 2: over a heated skillet, dollop that 2 tbsp of coconut oil right on and let simmer until melted.
step 3: toss in your sweet taters and begin to shift around with a spatula, making the oil cover them then toss in the 1/4 cup water – but step back as you do so as hot oil may “spray” on you as it sizzles up. no fun!! add in some cinnamon or whatever spice you want.
step 4: place a lid over and let simmer/”fry” for about 10 minutes or until the sweet potatoes become the texture you like.
step 5: ENJOY!!
