you know what makes my heart so happy?! when people tag me (on insta) in a recipe of mine they’ve recreated and they say how much they LOVE it. that. that right there brings me total joy! the fact that i can, from afar, impact someone with food, which is more than just “food” is so much fun and amazing! my comfort food turned healthy recipes help keep me on track, but feeling like i’m indulging, is more than just eating the recipe. it’s a mental thing 100%. so if i can help someone ELSE feel like they’re indulding, but actually keeping their diet on track and it makes THEM mentally sane and happy too, then that’s a WIN in my book.

so let’s get to it, shall we?!
my blondies i made a few weeks back were a total hit. not only in my home (we ate the entire batch in 3 days then i made another one because they became part of my nightly dessert) but are still one of my “most viewed” blog posts.
so i figured i shall UP the bar and re-create them into something else while tweaking the recipe to make it even more delicious! and waist friendly, of course.

i mean who doesn’t love pie?
especially with chocolate involved. done. win. get in muh belly.
ok so real talk right quick. i just ate a piece pre-writing this blog post, because i KNEW my stomach would be growling as i typed it up and posted photos, so i pre-prepared and ATE piece before cracking this open. whateva, don’t judge! you gotta do whatcha gotta do 😉 ha!
ok ok ok back at it!
1 cup oat flour
3 cups (1 large can/530grams) gorbanzo beans/chick peas
2 tsp extra virgin coconut oil
1/2 cup waldens syrup
1 tsp baking powder
1 splash vanilla extract
1/4 cup greek yogurt
1 scoop chocolate Slap protein powder (use code TAYLOR for 10% off)
1 tbsp mini semi-sweet chocolate chips
1 tbsp regular size semi-sweet chocolate chips
*preheat oven to 350*
step 1: drain, rise and toss those beans into a food processor and PROCESS AWAY!
step 2: grind your oatmeal if you haven’t yet, to flour then toss in the food processor with the beans. pour in syrup, baking powder, vanilla extract, softened coconut oil and greek yogurt! bing-bang-BOOM! everything but the Slap and Chips
step 3: process it all until it’s nice and blended, then add in the Slap protein powdahhhh. i like to save this for last because such a fine powder blends easier when everything else is already nice and mushy!
step 4: in a big bowl, with a spatula scoop out the dough then toss in those chips! i did two different sizes just because, no real reason!!
step 5: spray a deep pie dish with coconut flour spray (LOVE this stuff, Trader Joe’s brand is my fav) then spread the dough into the pan evenly.
step 6: pop it right into the oven for about 35-40 minutes or until golden. stick a knife in the center and if it comes out clean it’s DONE!
slice your warm gooey pie into 10 slices and ENJOY!
the evening i made it, i enjoyed with a scoop of chocolate ice cream drizzled with melted coconut oil – which hardens over ice cream like hard shell! WIN!
then for lunch dessert (which went down the hatch a few minutes ago) i heated it up and tossed a handful of cacao nibs over it.
the topping and combos are endless! maybe a big scoop of PB next time?!
